A vegetable based ingredient that helps to bind water and oil, primarily having a more prominent hydrophobic side (due to the long carbon chain). It can also function as a dispersion agent which helps insoluble particles. It comes from the attachment of sorbitan (dehydrated sugar molecule) and oleic acid (the long carbon chain part)
